(54) Bottlegaurd Milk Curry

This is a very low fat curry with traditional look. It can be served with rice as a side dish.

Ingredients:

Bottleguard  1 cup cut into pieces

2 cups milk

chana dal 1/2 spoon

urid dal 1/2 spoon

salt to taste

Red Chilies 2

mustard seeds 1/2 spoon

curry leaves a few

oil 2 spoons

Procedure:

  1. Heat oil in a pan, add mustard seeds, urid dal, chana dal, red chillies and curry leaves.
  2. After it starts to sputter add bottle gourd pieces to the pan.
  3. Saute until they are soft, add salt and milk to it.
  4. Cover the pan with a lid until they are properly cooked. switch off the flame as soon as you see the curry turns creamy.

Serve hot with rice and ghee.

 

 

(53) Tomato Bath

This is a very popular dish in India for breakfast. It is easy to make with roasted semolina and with some veggies.

Semolina 1 cup roasted

2 cups of water

tomatoes 2

oil 2 table spoons

cumin seeds half tablespoon

mustard seeds half tablespoon

Chana dal half tablespoon

Urid dal half tablespoon

salt to taste

onions 2 sliced

coriander leaves fresh, chopped

ghee 1 to 2 spoons for serving

Procedure:

  • Heat pan, add semolina. Roast until it turns light brown on low flame. keep stirring and transfer to a plate to cool it down.
  • Heat oil in a pan, add chana dal, urid dal, mustard seeds, cumin seeds, when mustard seeds starts to sputter add onions and tomatoes.
  • When the tomatoes are tender, add water.
  • Once water comes to boil add salt, coriander seeds and the roasted semolina and stir continuously to avoid lumps.
  • Leave it for 2 to 3 minutes until oil starts coming out from the corner.
  • Serve hot with ghee and a lime slice.

(52) Mango with yogurt chutney

This Mango yogurt chutney or mamidikaya pachadi is a good combination for Rice with any kind of lentil curry.

Ingredients:

2 spoons raw Mango pulp
1/2 cup freshly grated coconut
1 cup yogurt
Handful of fresh Coriander leaves
Green chillies 3

For tempering

Oil 1 spoon
Mustard seeds 1/2 teaspoon
Fenugreek seeds 1/2 teaspoon
Red chillies 2

Preparation:

In a mixer,  add Mango pulp, coconut,  yogurt, Coriander leaves, green chillies.

To this add tempering, serve with hot steamed rice with ghee as a side dish.

(51) Nutella choco cookies

The great way to start a day is with hot cup of tea and choco cookies. Try these yummy and easy cookies at home.

Ingredients:

Nutella chocolate cream 1 cup
Choco chips 3 spoons
Eggs 2
All purpose flour 1 cup

Method :

1. Take a  bowl add nutella, eggs. Mix them.
2. Add all purpose flour and choco chips, mix uniformly the whole mixture.
3. Take a baking tray, put one spoon of the mixture in round shape on the tray and bake them at 150 degrees for 12 minutes. (*Check in between, until they turn brown).
4. Remove them and give time to cool.

(50) Microwaved Apple cinnamon

Apples with cinnamon may be the perfect treat to satiate your sweet tooth.

Ingredients:

2 apples cut into small cubes
1 tablespoon  cinnamon powder
2 teaspoons sugar
1 teaspoon lemon juice

Method:

1. Microwave apples at 100 degrees for 2 minutes (until they are soft).
2. Add sugar, cinnamon and serve with lemon juice.

1 tablespoon Ginger juice
1 tablespoon honey
1 glass chilled water
1 tablespoon Lemon juice
Mint leaves for ganish

Preparation:

1. Pour water in a glass and mix Ginger juice, honey and lemon juice thoroughly.
2. Garnish with Mint leaves and Serve.

(48) Garlic Chilli Potatoes

The fried crispy potatoes in a spicy and hot sauce makes your snack time special. Enjoy with tomato sauce or any chilled dip.

Ingredients:

200 grams Potatoes sliced (fried)
1 tablespoon cornflour
7 Garlic cloves chopped
2 Green chillies chopped
1 tablespoon Tomato sauce
1 tablespoon soya sauce
1 teaspoon veniger
2 tablespoon butter
Salt to taste
Black pepper to taste
1 tea spoon lemon juice
1 teaspoon Roasted sesame seeds

Preparation:

1. Take a pan, add butter, chopped Garlic, chopped green chillies, tomato sauce, soya sauce, veniger.
2. Add cornflour mixed in water to the mixture. Mix the fried potatoes.
3. Add salt, pepper and mix thoroughly.
4. Garnish with black pepper, seseme seeds and lemon juice.

Serve hot

(47) Moong Dal Rice Pudding

This recipe with moong dal and rice pudding is very healthy and nutritious. It does not take much time to cook as it it one pot meal.

Ingredients:

1 cup Rice
1/2 cup Moong Dal
1 tablespoon butter or ghee
1 tablespoon cumin seeds
1 tablespoon asafoetida
Salt to taste
2 teaspoons grated Ginger
Handful of curry leaves
2 Green chillies sliced
4-1/2 cups water
For garnish grated carrots, coconut and 2 spoons ghee(optional)

Preparation:

1. Take a pressure cooker, add butter, cumin seeds, green chillies, curry leaves, asafoetida.
2. After it starts craking add water, salt and ginger.
3. Now wash Rice and Moong Dal and add it to the water.
4. Close the lid and let it cook for 15 to 20 minutes on medium flame.
5. Switch off the flame and open the lid after pressure comes down. Mix the pudding well as Rice and Dal must become very soft.
6. Serve on a plate when it’s hot and garnish with grated Carrot, coconut and ghee.

(46) Lemon Soup

This soup is light, subtle and flavorful with a taste of asafoetida. Enjoy sipping this comforting soup on anyday.

Ingredients:

Lemon juice 1/2 cup
Salt to taste
A pinch of turmeric
1 green chilli (sliced)
3 glasses of water
Chopped coriander leaves or curry leaves

For tempering:

Oil 1/2 spoon
Mustard seeds 1/2 spoon
A pinch of asafoetida

Procedure:

1. Take a large bowl, pour water, add salt, turmeric, green chilli, coriander leaves.
2.  Let it boil and add the tempering.
3. Switch of the flame and add lemon juice.

Serve piping hot.

(45) Summer Carrot Salad

This makes a handy, refreshing salad when you haven’t had time. Enjoy this chilled carrot salad.

Carrots 1 cup (washed, peeled and chopped)
Salt to taste
Carom seeds 2 spoons
Green chilled ( sliced/chopped)
Lemon juice 3 spoons

Take a bowl  and add all the ingredients above and mix well.
